what's better then cupcakes? Cupcakes with Champagne

I LOVE CUPCAKES! There so perfect and just the right size. I normally never add water to the mix I usally use fruit nectar makes them moist and adds an amazing flavor!



Over the weekend I thought I would practice making some cupcakes. I wanted an "adult" cupcake. Grady's (Bella's daddy) Birthday is coming up and he will be the big 3-2! So I wanted to make something special! I took french vanilla cupcake mix and instead of adding water I added peach champagne. Added some fresh diced peaches to the batter and baked them. Made homemade cream cheese frosting and a ill more peach champagne to the icing mix. Then I topped them off with toasted coconut they were delish!

Busy Mommy

Sometimes I wander if I am the only mom that gets in a hurry and does some not so smart things. Sometimes my mind goes a 100 miles a minute and things just are crazy. Takes these examples.


I was in a huge hurry yesterday and I needed to feed the girls fast!! The only thing I could find that they could eat in the car were lil packages of bite sized brownies. Breakfast being the most important meal of the day, what did I do? Yup, you guessed it I fed them brownies. All day I couldn't stop thinking about it, what kind of mom would feed her girls brownies at 630 am? Why didn't I throw some dry cereal in a baggie? After hours of beating myself up over it I realized, hey they ate and it's a memory that Roxy will probably have forever. She told her Maw-Maw that she had to hurry up and leave so she had brownies for breakfast and it was the best ever. Now, will I fed my children brownies everyday? NO! But, I am not going to beat myself up over a lil brownie they ate anymore.

When Roxy was 3 I somehow locked my keys in my car not really sure how I did this but I did it. I was freaking out. The car was on so she had air but, I on the other hand was freaking out anyways. I was crying, all i could think abut is how my little baby was in the car and I couldn't get to hear. She kept yelling and yelling I was assuming she was yelling cause she was alone in the car and I was too busy yelling and crying telling her to be calm to really hear what she was yelling about. Finally I got myself together and went to her window and said "mommy's going to find a way to unlock the doors stay calm I love you" Roxy's response was "MOMMY i've been yelling at you, I already unlocked my door!" My heart dropped and I went to open her door and she was right she had unlocked it already! I learned a couple of lessons that day. My lil baby isn't a lil baby and she can unlock doors and I really need to learn and listen!

About a week or two Roxy decided it was time to teach her lil sister Bella it was time to play hide and seek. I was in the kitchen making dinner and on an important phone call Roxy kept trying to tell me something but I told her fine later I am on the phone without really listening to what she was asking. After my call was finished i went to the living room to ask her what she wanted and they weren't there! I kept yelling for them, no answer! I looked everywhere in every room searching for them! Finally I found them in hall closet! I look at Roxy and ask her what the heck she was thinking? "I told you we were going to hide now and you had to find us while you were on the phone!" I learned never to say fine without knowing the question, atleast it was hide and seek and she didn't ask to get a tattoo :)

When Roxy was about 3 she woke up really early and asked me if she get cereal. I was half asleep  and said sure. She came back about 10 minutes later and asked if she could make me some. Being still half asleep I said sure again. About 20 minutes later I woke up and thought I better go check on her. I get to the kitchen and what do I see? Eggs, sugar and flour all over the floor and Roxy sitting in the middle of it with a spoon. I was shocked! She looked up at me and in the sweetest lil voice ever " Mommy, I am making you a cake cause your the best mommy ever!" After hours of scrubbing I realized then I wish I would have taken a moment to just enjoy it with her. To have taken a picture. I still to this day beat myself up about that day. So another lesson learned it might seem bad at the moment but, years from now it will be a sweet lil memory that sticks out. Take pictures of everything cause, 4 years later they are funny and sweet!

25 things on my mind

1. Flipping threw channels the other night I saw Kate plus 8 on TLC... Roxy was born a day after the  sextuplets were... and they are still in high chairs, I got really bothered by it who puts a 6 year old in a high chair when they are old enough to sit in a chair kind of creeped me out.

2.  I am addicted to watching teen mom on MTV. Embarrassing to admit but true.

3. I really really need a mani/pedi

4. I am on a new diet and skinny cow chocolate truffle bars are amazing! There a 100 calories and they really curb my sweet tooth.

5. Roxy is starting soccer in October she seems super excited, I on the other hand am happy for her but not excited about the 7 am Saturday games

6. My Birthday is coming up in a couple of weeks and I can't believe I am going to be 26... sad part is I feel older :(

7. My Birthday is coming up and I love marble slab's ice cream cake :)

8. My Birthday is coming up and I love gifts and cards that my kiddos make me :)

9. My favorite number is 8. I won $500.00 on roulette by putting all my chips on 8 on my birthday last year!

10.You want me to shut up about my birthday, don't you?

11. I'm craving marble slab ice cream now!

12. I have no idea what I am going to make for dinner!

13. I decided on Bella's birthday theme

15. I cant believe my babies are going to be 7 and 2 next year!

20. I have a horrible headache from going cold turkey without Cokes since i am on a diet

21. Caffeine headaches are almost as bad as migraines!

22. I got the girls Halloween costumes!

23. October is my favorite month!

24. Fall is my favorite season!

25. I am going to go cuddle with my kiddos and enjoy my FRIDAY! What about you?

Yeeee Hawwwww!

Starting tomorrow the Fort Bend County Fair starts! Roxy's school district takes this very seriously as tomorrow there off of school and can get into the fair for free... I hear a funnel cake calling me!! So I am planning on taking the girls to the fair tomorrow for some fun! Today at school was go western day and Roxy was allowed to wear her "cowgirl" attire! What can I say I say one proud mommy :)

Ta-Dah!

After 3 days or organizing and Roxy's dresser finally coming in... ORGANIZATION 2010 is complete... well almost Bella's other dresser still has to get moved from my mom's house but, other then that there rooms and clothes are organized. I got rid of so many toys and clothes is was unreal!! So all that has to be done in both of there rooms is painting the walls and hanging up all pictures and stuff I have for them. Bella's two dressers are going  to get repainted aqua/shabby chic/distressed but, i am not going to do that til fall when its not 100 out side and mosquito's sucking the life out of me every 2 seconds... 

Roxy's walls are going to be painted a pale pink... but the main the ceiling is where its all happening were putting in a white chandelier and painting the ceiling hot pink with pale pink damask print! I have a bench in front of her window I still need to repaint black and reupholster.

Bella's room is getting painted a light shimmer green (think lime green but down 4 stages) and she will have hummingbirds and tulips on her walls. My mom got her this great white picture frame from hobby lobby and soon we are going to to take a family picture so she can have it in her room!

I am really happy that I was able to accomplish all of it, cause there where many many many times I wanted to throw in the towel! School starts in less then 2 weeks and I am so excited about it! Hope everyone is having a great Wednesday! I'll be sure to post some pictures of there rooms soon! What a weekend!

sorry I haven't posted much things have been busy. Bella still is sick and I spent all weekend with her and trying to organize the girls rooms. am trying to get everything all together so it can be painted and everything can be hung on the walls. Bella has tubal surgery on her ears Thursday. So I am hoping that things are going to go OK with that. I start school in a couple of weeks so, I will try to set aside time to blog more regularly. I picked what I am going to school for... drum roll please!

After going back in forth between this job and that job. I put a lot of thought in what I really wanted to do and figured the best thing I could do is something I love that makes me happy and will make me proud of myself. So I won't hold it in any longer I am going back to college for... EVENT PLANNING/FLORAL design and Business. Lucky my Business major can all be done online. My event planning/floral design will all be hands on and I couldn't be happier about my choice. I am so looking forward to going to my new classes in October and I hope that with a lot of hard work one day soon I will have my own floral/event planning shop! So here is to a new journey in my life that I couldn't be more happy about!

why oh why did you fail us?

My poor poor Bellaroo... 6 months ago she had tubes put in her ears. The dr, said the pros out weighed the cons. I did what any normal anxiety ridden mother would do and got 2nd opinions, talked to other moms, looked the surgery up and after all the 2nd opinions, all signs pointed to that it needed to be done. Ever since the tubes have been put in we have still had ear infections... some worse then before the tubes were even out in. THEY FAILED! 12 days ago we went to Bella's pedi. and double ear infections over the weekend i knew something was up she wasn't acting like her self so this morning i took her in to see her dr, and yet again a another ear  infection! So now they are wanting to take them out and redo them! Being as over protective as I am red flags are going up... if they didn't work the 1st time why will they work this time? Bella can only say a handful of words as is what if this is causing her to loose her hearing? Should i put her through another surgery that could fail yet again??? I want answers, I need answers! I just don't know what to do or not to do so, if anyone has dealt with this please let me know!

HUGGIES YOU SUCK!

Dear Huggies diaper company, 
there is no other way to say this then YOU SUCK!! You have failed me you have ruined my day by exploding all over the place. You are banned from my daughter's adorable tush! Thanks so much for making my Saturday suck cause i will be cleaning those nice "absorbent crystals" all day and washing her bedding multiple times! And the most upsetting for this all THEY WERE OVER NIGHT DIAPERS! My money will go back to fisher-price over night diapers and Target for day time use! Amazingly they are cheaper then your sucky diapers; and guess what there absorbent crystals are actually absorbent! 
Miss.Bella's been working on potty training!
*this blog is my opinion that huggies SUCK but please feel free to use any brand of diapers you like! If you like exploding non-absorbent diapers and like cleaning and washing your child's entire room multiple times a day I totally recommend huggies diapers!*

i did it!!!

I took a step forward into trying to not be so social awkward! Thursday Roxy's school had an open house. I asked my mom to come with me but, she had other plans. All day Thursday I yo-yoed between going and not going. I picked Roxy up from school and she handed me an invite to open house that she personally made. I decided then and there my daughter deserved to have her mom go. So I got dressed, cried in my car, composed my self and walked into her school and did it! I know it seems like such a small feat but, its a one step close in reaching my goal. I talked to other parents, joined the school's PTO and talked to her teacher. I was was just happy I did it for Roxy! So I DID IT!!!! I have a long journey ahead of me but, at least I have the right foot forward!

homework, uniforms, lunches oh my!

i consider myself a laid back kind of parent who likes fun but also likes organization and a lil routine. Roxy was in a private kindergarten so i knew going to public school would be a little different.
A lot of parents love uniforms for one reason or another but I on the other hand am not one of those people. In our school district its only elementary school that has uniforms each school is different. Roxy has the choice of black khaki or navy skirt, dresses, capri's, shorts, pants and navy white and red polo type shirts. I HATE it i can't stand it cause, even with uniforms its a hassle, you have to make sure it's washed, you still have the buy regular clothes for after school and weekends. It gives a child no self expression and I HATE IT! I know some people are going to think I am nuts what kind of parent doesn't like uniforms well I am that parent. I had to wear uniforms from 1st to 9th grade! In high school is probley when you would need uniforms the most if your worried about people making fun of people. I love Roxy's school but this, is one thing I am not happy about. I know just because I don't like it doesn't mean it will change so that means 5 years of uniforms are in store for me.
I let Roxy buy school lunch the other day I gave her 5$ thinking she would come home with some change... I was wrong she used all the money and bought a grilled cheese, yogurt, fruit cup and milk... School lunches have really gone up in price since I was in school.
  I was reading a blog the other day and the mom was saying how happy she wa her 4 year old could read... I think that's great but,  I am happy that my 6 yr old is just starting to read. I wanted her to be a child as long as she could it goes by too fast! I think it's absurd having 1st graders doing 2 hours of homework... They spend 8 hours at school a day and then 2 hours of homework I THINK NOT! I believe in homework but, there should be a limit. An adult who goes to work will work 8 hours and call it a day (in most cases) and not bring there work home they have had a enough well kids are the same! She's not studying to be a brain surgeon shes going to school to learn to learn 1st grader things.
I remember in 1st grade learning adding and subtraction now they make you learn fractions! I guess the point I am trying to make is I want my kids to go to college and do great in high school but I don't want them to want to feel over whelmed. I just think that school's are trying to push a little to hard... I want my daughter to play with barbies and dress up and be a child as long as possible of course I want her to learn but, I think there needs to be a middle ground. Kids want to grow up faster and faster, they have cell phones and tv shows about being teen moms even nickolean that used to have cartoons when i came home from school has shows about being in high school and not living at home. So I know Roxy will continue to learn at school and get smarter and brighter every day but, at home I will try my hardest to always instill you have the rest of your life to be an adult you only have 18 years as a kid!

Miss. Bella woke up this morning with eyes crusted shut!!! So after a Dr's visit we learned she not only has pink eye, double ear infections and a viral infection but, she weighs in at 37 lbs! Roxy and Bella are ten lbs apart! I have been working on a post since Sunday and hopefully I will have it finished tomorrow and be up to normal blogging but, for now I am going to go cuddle with my crusty eyed baby and make her feel better!

As i was about to push publish post my cell rings Roxy's school nurse called to tell me she had a bad nose bleed... so now I am off to go cuddle with my crust eyed baby and my bloody nosed baby "1st Grader" ooooooo what a day!
